Expert Tips

To save time, prepare the rice pudding beforehand and store in the refrigerator until you’re ready to make the flan.

Directions

  • 1 To prepare the rice pudding, pour the rice and water in a medium-sized pot. Cover, and let cook over medium heat until the water has evaporated and the rice is al dente, about 8 minutes.
  • 2 Reduce heat and add the sugar, all spices and peppers, and 1 cup of milk. Cook slowly, stirring constantly, until the rice has absorbed all the liquid.
  • 3 Add 1 additional cup of milk, and cook until all milk has been absorbed and the rice is tender and creamy, repeating the last step, approximately 25 minutes. Remove from heat and let cool. Remove and discard the spices and peppers.
  • 4 To prepare the flan, add sugar to a medium-sized pot and stir continuously until all the sugar has dissolved and is amber in color, forming a caramel, over medium heat.
  • 5 Carefully divide the caramel between the two flaneras (molds used to make flan), distributing it so that it covers the bottom and sides of the molds. Let cool completely.
  • 6 For the flan, put all flan ingredients in a blender and blend together until fully incorporated.
  • 7 In a large bowl, mix the (cold) rice pudding and the flan mix. Divide the new mix between the 2 flan molds and cook for 1 hour in a bain Marie.
  • 8 Let cool before removing the flan from the mold.
