Rice Pilaf with Dried Fruits

Ingredients

  • 2 tablespoons sunflower oil
  • 1 small onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups chicken broth
  • 1 1/2 cup basmati rice
  • 1/4 cup dried cranberries
  • 1/4 cup pine nuts
  • 1/4 cup golden raisins
  • 1/2 teaspoon saffron seasoning
  • Salt to taste

Directions

  • 1
    Heat the oil in a skillet.
  • 2
    Sauté the onion over low heat until it’s caramelized.
  • 3
    Stir occasionally to prevent burning.
  • 4
    Add the garlic and sauté for 2 minutes.
  • 5
    Add the chicken broth and rice.
  • 6
    When the broth starts to reduce, add the nuts and saffron.

    Cover the pan and cook over low heat for 20 minutes, or until rice is well cooked.

    You can substitute cranberries for apricots or other dried fruits.

    You can use saffron, but if you don't have any you can also use seasoning with saffron.
