Ingredients

  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 cup brown rice flour
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 tablespoon oil
  • 1 pinch salt
  • 1 cup Yoplait® Greek yogurt
  • Salt and pepper to taste
  • 8 oz smoked trout, cut into thin slices
  • 1 jar hearts of palm, cut into thin slices
  • 2 tablespoons chives, chopped

Directions

    Put the flour, rice flour, eggs, milk, water, oil and salt in the blender. Blend until mix is homogeneous. Transfer to a bowl, cover and refrigerate for a couple of hours.

    Heat a nonstick skillet on medium heat. Place approximately 1/4 cup of crepe batter in the skillet and swirl it around in circles quickly, to spread the batter over the whole surface. Cook for 3 minutes. Carefully turn over the crepe and cook for 1 more minute. Transfer to a plate and cover with wax paper. Repeat with the remaining batter.

    In the meantime, put the yogurt in a bowl. Season with salt and pepper. Mix well and set aside.

    Assembly: Place a crepe on the work surface. Spread Greek yogurt on it. Arrange a few slices of trout and hearts of palm on each crepe. Fold it in half and then again in half.

    Repeat with the remaining crepes.

    Top with chives and decorate the dish with some salad greens, if you want.

    Serve at room temperature.

Expert Tips

  • tip 1
    If you can't find brown rice flour, replace it with the same amount of sweet rice flour (not glutinous).
  • tip 2
    Don't get confused with the thick rice flour that is used to make rice cream, because the result will be completely different.
  • tip 3
    Replace the trout with smoked salmon, or if you prefer, with prosciutto.
  • tip 4
    Replace the hearts of palm with another vegetable you like, for example, mushrooms.
