I love gluten free* desserts! Since rhubarb season is rapidly approaching, I thought it would be a good idea to share this delightful recipe with you. Rhubarb is fantastic in desserts like this one, featuring strawberries, almond and orange peel. It’s truly delicious.

Ingredients

  • 1 lb of rhubarb
  • 4 oz of sugar (raw or brown)
  • 1/2 lb of organic strawberries, leaves removed and sliced down the middle
  • 4 oz of almond flour
  • 3 tablespoons of unsalted butter, room temperature
  • Grated peel of 1 orange
  • 1/2 cup of minced almonds
  • Whipped cream, if desired

Directions

    Preheat the oven to 375°F.
  • 2
    Wash rhubarb and make certain to shake the water out, and dry it well. Cut the stems in small strips and discard the leaves.

    Place the rhubarb pieces in a baking dish. Cover the pieces with 3 tablespoons of sugar and mix them well. Make sure the rhubarb is lying flat on the dish.

    Cover the dish with aluminum and roast it for 15 minutes. Remove the aluminum and add the strawberries. Mix everything well and place it back in the oven 15 more minutes

    While it bakes, mix the remaining ingredients until they take on the appearance of granola.

    Divide the rhubarb and strawberries into individual serving dishes, shake the granola-like mixture on each; bake them for 20 more minutes, or until they turn golden brown and bubble.

    Allow the dishes to cool, and serve with whipped cream, if desired.

    If you don’t have almonds, you can use other nuts, pecans or sunflower seeds.

    Serve with vanilla ice cream.
