The season I love the most is coming here: summer! I'm a big fan of the sun and the sea, and I tend to eat fresh salads that are perfect for hot summer days! Unlike other kids, as a little girl I loved eating salads. Now that I'm a mom, I try to pass on the same feeling to my family. I like to get creative and mix and match ingredients, like grandma taught me. Apart from vegetables, I like to throw in a few fruits to give it an extra kick of flavor, color and texture! I love strawberries, raspberries and watermelon... so here's a recipe for you and the whole family, including spinach and avocado. The red tones represent passion, and the green touch gives me strength and energy. I serve this salad with an irresistible cherry vinaigrette that will captivate your palate!

Ingredients

  • 5 oz baby spinach, fresh
  • 1 1/2 cup fresh strawberries, diced (1-inch pieces)
  • 1 cup whole raspberries
  • 1 1/2 cup watermelon, diced (1 1/2-inch pieces)
  • 1 cup avocado, diced (1-inch pieces)
  • 3 slices toasted jamón Serrano (dry-cured Spanish ham)
  • 1/2 cup crumbled goat cheese (4 oz)
  • 1/2 cup cherry vinaigrette

For the cherry vinaigrette:

  • 6 tablespoons red wine vinegar
  • 3 tablespoons honey
  • 5 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cups frozen cherries, chopped

Directions

    Rinse the baby spinach with fresh water and drain.

    Rinse the strawberries with fresh water. Remove the green leaves, and dice in 1-inch pieces.

    Rinse the raspberries.

    Dice the watermelon into 1 1/2-inch cubes.

    Peel the avocado and remove the seed. Chop into 1-inch cubes, and place them in a jar together with the seed so they don’t turn black.

    Place three slices of ham in a small tray with aluminum or wax paper, and cook in the oven at 350°F for around 15 minutes. Once toasted, cut in little pieces with your hands and set aside.

    Crumble the goat cheese with your hands or with a fork.

    For the cherry vinaigrette: Whisk the red wine vinegar and the honey. Slowly add olive oil and salt and pepper, to taste, and the cherry pieces. Mix well. Pour in a sauce boat.

    For the salad: Create a spinach bed in a tray, add the fruits, the ham and the goat cheese. Serve immediately. It's better if you season each individual salad serving.

    Try to buy frozen cherries (they're seedless).

    Buy seedless watermelon to make your recipe easier.
  • tip 3
    Once you cut the avocado, make sure you put the pieces next to the seed. That will prevent the avocado from turning black. Remove the seed when serving.

    Serve the salad immediately so it doesn't lose freshness. Sprinkle each individual serving with vinaigrette sauce.
