Ramen Chicken Burger

Chef Keizo Shimamoto wanted to join his favorite flavors from the Asian and American kitchen and that is how the Ramen Burger was born. There are many different variations of the Ramen Burger and I dared to give it a try with ramen pasta and a few of our favorite Latin ingredients. Enjoy!

Ingredients

  • 4 packages (3-oz each) of ramen noodles
  • 3 whipped eggs
  • 1 pound of ground chicken meat
  • 1 cup of chopped cilantro
  • 1 cup of red onion finely chopped
  • 2 cup of watercress
  • 2 tablespoons of hoisin sauce or plum sauce, or your favorite BBQ sauce
  • 4 slices of fresh roasted pineapple

Directions

    First cook the ramen as per their instructions, but don’t use the seasoning it comes with simply cook with salt.

    When the pasta is ready, cool with cold water and strain well. Combine the cold pasta with the whipped egg and one package of seasoning from the ramen.

    Place the pasta in individual molds or medium-sized ramekins. You’ll need 8 molds to make 4 burgers. This mold will give the pasta the shape of hamburger buns. Cover the molds with plastic and press down so that the pasta becomes compact. Refrigerate for at least 30 minutes.

    In the meantime, prepare the chicken by combining with the onion and cilantro. Form the burgers and cook. Slice the pineapple and cook in a saucepan until it is caramelized as desired.

    Remove the molds from the fridge. Add the canola oil to a saucepan and let heat. Once the oil is hot, fry the ramen. Carefully remove from the mold so it doesn’t lose its shape. Let brown on both sides and set aside. Repeat this process with the rest of the molds.

    To create the burger place a ramen bun on a dish, add a bit of hoisin sauce, add the chicken burger, slice of pineapple and the fresh watercress. You can add sriracha sauce if you like spicy food.

    You can use pork instead of chicken and use arugula instead of watercress.
