Directions

  • 1 Set oven to broiler.
  • 2 On a foil covered baking sheet, place poblano chiles and broil for 30 minutes or until skins are charred.
  • 3 Remove from oven and place chiles in a plastic bag for 10 minutes. Remove chiles from plastic bag and peel with hands under running water. Slice in strips.
  • 4 Heat oil in a medium skillet over medium heat. Add chile strips, onion, and tomatoes. Cook for 5 minutes or until onions are tender. Remove from heat and add cheese cubes into chile strip mix and stir. Heat tortillas and spoon 3 tablespoons of chile strips on warm tortilla.
  • 5 Serve and enjoy!
