My son tends to come home from school very hungry. An afterschool snack must be ready by mid afternoon so I can make sure he eats well. I tend to have ready something hearty that is good for him because I know that, no matter what it is, I will not have trouble getting him to eat it. Quinoa patties are a great snack food because they are easy to prepare and eat. They pair well with a creamy dip such as sour cream or Greek yogurt and they satisfy your hunger instantly. Ingredients

  • 2 1/2 cups cooked quinoa
  • 3 large eggs, beaten
  • 1/4 teaspoon lemon pepper
  • 1/3 cup yellow onion, chopped
  • 1/3 cup cotija cheese, crumbled
  • 2 cloves garlic, finely chopped
  • 3/4 cup seasoned bread crumbs
  • 1/4 cup grapeseed oil
  • 2 tablespoons chopped cilantro

Garnishes:

  • 3 tablespoons chopped parsley
  • Greek yogurt or sour cream, to taste

Directions

    In a large bowl, combine quinoa, eggs and lemon pepper. Stir in onion, cheese and garlic.

    Stir in breadcrumbs and allow to rest for 5 minutes.

    Form patties of approximately 3 inches in diameter. Place on a large platter.

    In a large skillet, heat oil over medium heat. Fry patties in batches of 4 or 5. Fry for 6 minutes or until brown. Carefully flip patties with spatula and fry for 5 minutes. Add more oil if needed.

    Place fried patties on a paper towel lined plate to drain any excess oil.

    Serve with a sprinkle of parsley and a side of sour cream or Greek yogurt.
