Expert Tips

Depending on how you plan to present your dish, experiment with how you cut and fill your bell pepper. Don’t discard the stem and top your creation instead, making a beautiful presentation.

Celebrate Father’s Day with a beautiful presentation that will sure satisfy his appetite. This Quinoa and Ground Turkey Stuffed Pepper still gives him the hardy meal he enjoys, but you feel good knowing that Dad is staying healthy with a complete, complex grain and vegetables. And because this meal is presented so beautifully, he’ll think you’ve been cooking all day!

Directions

  • 1 Heat oven to 375°F.
  • 2 In a saucepan, bring 2 cups of chicken broth to a boil. Once boiling, add quinoa, reduce heat and cover. Cook according to package directions, approximately 7-10 minutes, or until all the liquid as been adsorbed.
  • 3 Meanwhile, coat a pan with olive oil and brown ground turkey with onions and tomatoes. Add garlic, making sure to stir often, not to burn it. Add seasonings. Once browned, add strained can of black beans and let flavors incorporate.
  • 4 Once quinoa is ready, add it to the ground turkey mixture and cook for 2-3 minutes, allowing the grain to adsorb some of the flavors from the ground turkey.
  • 5 Arrange prepared bell pepper halves in a baking dish and fill with just enough of the quinoa and ground turkey mixture to reach the top. Place baking dish in preheated oven for 20-25 minutes, or until pepper is tender.
  • 6 Top with sour cream and cilantro. Serve warm.
