Directions

  • 1 Place cabbage into a large bowl, sprinkle with 4 tablespoons salt and cover with warm water. Mix with fingers to combine cabbage and salt; set aside for 30 minutes. Drain well and return to bowl.
  • 2 In a food processor puree ginger, garlic cloves, jalapeno, sugar, fish sauce and 1/3 tablespoon salt. Taste and adjust seasoning to your preference.
  • 3 To the drained cabbage add carrots, scallions, jicama, puree from blender, and cilantro; toss to coat.
  • 4 Place in a clean glass jar and refrigerate for 4-6 hours.
