Mashed Potatoes with Roasted Garlic

Do you like potatoes? I love them! They're a great side to serve with beef, chicken, fish, a juicy burger or even a hot dog. Potatoes are never missing from my pantry and I'm sure many of you are the same. Fried potatoes with a touch of truffle oil will satisfy all the cravings of the house. Use yellow potatoes, they're delicious! I was inspired to write a little more for you today because I'm so satisfied with my lunch preparation at home: delicious mashed potatoes with garlic and blue cheese, it was very successful. I served it with steak medallions in demi-glace sauce and white truffle oil. So delicious! I have to tell you, I decided to make this delicious and creamy mashed potato recipe because it's super easy to make and only requires 5 ingredients. As you will see, the main dish – the meat – takes more time to cook and more ingredients. The mashed potatoes with roasted garlic were the perfect side to highlight the exotic flavor of my steak.

Ingredients

  • 8 cloves garlic, roasted
  • 4 medium potatoes (preferably Russet or Yukon)
  • 4 tablespoons butter
  • 2/3 cup hot milk
  • 1/2 cup blue cheese, crumbled

Directions

    Cut a piece of aluminum foil and wrap the head of garlic in it with a bit of olive oil. Place in the toaster oven and cook at 350 °F for 30 minutes to roast. Check to see if the garlic is soft and browned after 30 minutes, set aside.

    Wash the potatoes and use a brush to clean the skin well.

    Place in a pot with water and salt. Add the potatoes whole with peal and let the water boil. That water should cover the potatoes with 4 inches of water on top.

    Let boil for 30 minutes. The potato should be cooked thoroughly and you should be able to insert a knife and carefully lift it without splashing. If it falls apart easily, it's ready, but if the knife stays in then the potato is not ready. Let it cook a bit more.

    Proceed to strain them, move carefully with a knife and remove the skin, but not completely. Return to the potatoes to the pot without water. Use a masher or a fork to mash the potatoes. Add the butter, keep mashing with a fork to prevent lumps. Add the milk little by little with the roasted garlic. After mashing and mixing the ingredients, check the texture. If it needs to be softer, add a bit more milk and butter. Add the blue cheese in a folding motion. Season with salt to your liking. Serve hot.

    Cook the potatoes whole and with the skin. Otherwise, the potatoes will lose their starch and will take on too much water.

    Cook the potatoes in water with a little bit of salt. The water should cover the potatoes.

    Mash the potatoes while they're hot right after straining them to prevent lumps.

    The milk you use to soften the potatoes should be warm, but the butter should be cold.

    You can add finely chopped onion to the mixture.

    You can use cream or evaporated milk instead of milk.

    Don't use a blender or a food processor to make the mashed potatoes because they will come out too sticky.
