These yummy Pumpkin Pepita Cranberry Cookies are ideal for a lite dessert after a heavy meal. They almost have a cake consistency, yet are not super sweet. There is just enough dulce there to curb your sweet craving, and they add the finale to a perfect meal.

Directions

  • 1 Preheat oven to 350°F.
  • 2 In a bowl combine flour, salt, baking soda, and pumpkin spice together. Whisk and set aside.
  • 3 In a large bowl or stand-up mixer stir in sugars (regular and brown) and butter. Mix until creamy (it might be grainy). Then add egg, vanilla, and pumpkin. Mix until well combined and fluffy.
  • 4 Add flour mixture to pumpkin sugar mixture. Mix until combined. Then add cranberries and pepitas. Mix it well, again.
  • 5 Drop rounded tablespoons of dough onto a lined cookie sheet 2 inches apart. Bake for 20 minutes or until cookies are slightly browned around the edge.
  • 6 Remove from cookie sheet and transfer to a cooling rack.
