Puerto Rican Coquito French Toast

This twist on French toast is prepared using the same ingredients as traditional Puerto Rican coquito. It will make a new, welcome addition to your holiday breakfast menu. This French toast is easy to prepare, loaded with the same delicious flavor as coquito, except the mix is whipped up without liquor so everyone in the family can enjoy.

Ingredients

  • 1 can (11 oz) refrigerated Pillsbury™ Original French Bread
  • 12 oz coconut milk
  • 8.5 oz coconut cream
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground clove
  • 2 eggs
  • 1/2 tablespoon vanilla
  • 1/8 teaspoon salt
  • 2 tablespoons unsalted butter
  • Pancake syrup, to taste

Directions

    Open the can of dough and prepare according to package instructions, letting cool completely once baked.

    In a container or bowl, mix the coconut milk with the coconut cream, and add the cinnamon and clove. Beat the eggs, adding them to the mix while stirring gently. Add the vanilla and a pinch of salt.

    Heat a griddle or large frying pan and add the butter. Submerge each of the slices of bread in the milk and egg mix.

    As you go about dipping, arrange the bread in the pan and cook each slice until golden, approximately 1 minute each side.

    Remove from heat and serve with pancake syrup.
