Expert Tips

Use a pork leg or pork meat instead of a lechón pork, but adjust baking times.

Directions

  • 1 Chop the peeled garlic finely. Mix with the salt, pepper, parsley, oregano and olive oil.
  • 2 Using the tip of a knife, make some cuts on the pork skin and rub the marinade so it penetrates the cuts.
  • 3 Put the pork in a large bag or in a closed container that you can leave in the fridge so it marinates for at least 12 hours.
  • 4 Preheat the oven to 375 °F.
  • 5 Place the pork in a roasting pan with a grill rack. If you want, you can also add some chopped vegetables at the bottom, but this is completely optional.
  • 6 Put the rosemary sprig next to the lechón pork and bake for about three hours or until the skin is really crispy and golden brown.
  • 7 If you want, you can collect the juice coming out of the pork and make gravy to serve with it.
