Potato and Meatball Stew

In my home, our Latin heritage is celebrated every day; ever since I’ve come to live in the U.S. and had children who are both Latino and from the States, I’ve wanted them to learn all about Latin cul-ture. Hispanic Heritage Month is ideal for appreciating our raíces, and one of my favorita ways to mark the occasion is by preparing traditional dishes such as this potato and meatball stew. This recipe comes from the culinary repertoire of my grandmother and mother; it couldn’t be easier, deliciosa, or more comforting. So, I invite you all to dust off a large pot and get ready to prepare for national Hispanic Heritage Month. Your body and taste buds will be sure to thank you!

Ingredients

For the meatballs:

  • 1/2 lb ground pork
  • 1/2 lb ground beef
  • 1 small white onion, finely diced
  • 3 garlic cloves, crushed
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 4 tablespoons freshly chopped cilantro
  • 2 eggs
  • 1/4 cup Progresso™ Bread Crumbs

For the stew:

  • 10 cups Progresso™ beef flavored broth
  • 1/2 teaspoon ground cumin
  • 3 carrots, peeled and sliced
  • 6 large potatoes, peeled and chopped
  • Salt and pepper, to taste
  • 1/2 cup freshly chopped cilantro

Directions

    In a large bowl, combine all the ingredients required for the meatballs. Assemble the balls one by one and set aside.

    Pour the beef broth into a large pot and heat until the liquid reaches a boil. Afterward, add the meat-balls, cumin, salt and pepper.

    Cook for 20 minutes over medium heat before incorporating the carrots and potatoes. To finish, let simmer for 10 more minutes.

    Serve hot, garnished with some freshly chopped cilantro and a side of sliced avocado.
