Pork Loin and Fruit Kabobs

Here's my favorite recipe when I make kebabs. I hope you like it!

Ingredients

  • 4 tablespoons of orange juice
  • 2 tablespoons of honey
  • 2 1/2 tablespoons of olive oil
  • 1 tablespoon of soy sauce
  • 2 ground bay leaves
  • Salt and pepper, if desired
  • 4 pieces of pork loin, extra lean
  • 5 slices of green apples
  • 5 slices of peaches, not too ripe
  • 5 red grapes
  • 5 pieces of sweet red pepper

Directions

    Mix orange juice, honey, olive oil, soy sauce, ground bay leaves, salt and pepper.

    Marinate the pork, fruit slices and peppers in the mixture for 1 hour in the refrigerator.

    Preheat grill to medium/low temperature.
  • 4
    Drain the pieces of pork and fruit from the marinade, and save the remaining mixture.

    String the ingredients on the skewers in the following order: 1 grape, 1 piece of pork, 1 slice of apple, 1 slice of peach, 1 piece of pepper, and continue in the same order until full. There should be a grape on each end.

    Place the skewers on the grill. Brush them with the remaining marinade and turn them frequently, for 10 to 15 minutes or until the meat is cooked.

    Serve garnished with orange slices and roasted asparagus.

    To avoid skewer sticks from burning, soak them in cold water before assembling.
