  • 1 Boil the dried ancho and guajillo peppers with the 3 cups of water. Remove from the heat and let sit until they're completely soft. Blend the peppers with the water they cooked in along with the garlic and process until completely ground.
  • 2 Preheat the oven to 350°F. Cover a container or mold with a generous amount of cooking spray.
  • 3 Season the pork chops with salt, black pepper and ground cumin to taste. Place the pork chops in the container with the cooking spray. Place pieces of the onion and sweet potato on top and add the pepper purée.
  • 4 Cover the container with aluminum oil and back for 60-90 minutes or until the pork chops are completely cooked. Serve with green salad and garlic bread. Enjoy!
