Surprise your family with this almond crusted chicken. This vivacious dish is appealing and delicious, so it’s perfect for a Sunday meal or a special event. Ground almonds create a crunchy and golden crust that’s hard to resist. I love using them on chicken legs because they’re turn out juicy and look great, but feel free to use chicken thighs or breasts. This pairs perfectly with white rice.

Ingredients

  • 4 chicken legs
  • 40 almonds
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/8 cup oil
  • 1 tablespoon butter

Directions

    Preheat the oven to 400° F.
  • 2
    Absorb all the moisture from the chicken legs with a paper towel.

    Crush the almonds and mix with the garlic powder and salt.
  • 4
    Grease up each piece of chicken with the oil. Then, lay them on the almond mix until they’re completely covered.

    Pour the remaining oil into a pan. Add the butter and stir until it’s melted and mixed with the oil. Add the chicken pieces, with the skin down and sear each side for about 3 minutes.

    Move the chicken to a baking tray.

    Bake for about 40-45 minutes or until the meat’s internal temperature gets to 175-185° F and the meat juices have a clearer color. The time can differ depending on the oven.

    Let it cool down for 5-10 minutes.

    If you want a lower fat dish, remove all of the skin and excess oil.

    You can add chopped parsley or cilantro to the almond mix. It will look great and it will be delicious.
