Many of us may believe that eggs are strictly a breakfast food, but these poached eggs are here to prove you wrong! They're very easy to prepare and so versatile that you can make them any time of day. You can even serve them as an appetizer or for a special occasion. I usually prepare them as an appetizer for Easter, which tends to leave all of my guests with the hopes of coming back next year for more! Take note of the ingredients: toast, cheese, chard and eggs. It couldn't be simpler.

Ingredients

  • 6 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 2 tablespoons cream
  • 2 cups of grated Swiss, fontina or gruyere cheese
  • Salt and pepper to taste
  • 1 garlic clove
  • 1 1/2 cups chard
  • 1 tablespoon white vinegar
  • 4 eggs
  • 4 slices of sandwich bread

Directions

    Heat the oven to 350° F.

    Melt 3 tablespoons of butter over low heat, add the flour and stir continuously.

    Add the milk little by little and don’t stop stirring until you get a consistency similar to a Béchamel sauce.

    Add the cream and 1 cup of cheese, and finish off by adding salt and pepper to taste.

    Fry the garlic and chard in a saucepan with two tablespoons of butter. Remove the garlic and mix the chard with rest of the cheese.

    To poach the eggs, boil a good amount of water with salt and add the vinegar.

    Crack each egg and slowly add them to the water. Let cook for 3-4 minutes and remove carefully so they don’t break. Set aside on a dish.

    Spread the rest of the butter on the bread and place on a tray. Bake until the bread is toasted, add the chard and then an egg on top of each slice.

    Cover with Béchamel sauce and return to the oven until you achieve a gratin, about 8 minutes.

    Serve immediately.
