Pineapple Mojitos

I love a classic mojito, but once in a while I also like mixing it up and creating flavored versions with my favorite fruit. Spring and summer are the perfect seasons to make drinks with fresh fruit. These refreshing pineapple mojitos are prepared with pineapple juice, lemon juice, mint, sugar, rum and soda water. They're very easy to make and contain no gluten.

Ingredients

  • 8 ozs mint leaves
  • 1/2 cup sugar
  • 1 cup rum
  • 1/4 cup fresh lemon juice
  • 2 cups pineapple juice
  • Ice, to taste
  • 1/2 cup diced pineapple
  • 2 cups soda water

Directions

    Place the mint leaves and sugar in a pitcher and muddle with a cocktail masher or wooden spoon.

    Add the rum, lemon juice and pineapple juice; mix well and taste. Adjust the rum and sugar as needed.

    Add a few cubes of ice and diced pineapple.

    Add a bit of soda water and mix.

    Serve immediately.

  • tip 1
    For a virgin mojito, just omit the rum and you'll have a tasty pineapple, mint and lemon juice.
