When I was little, my mom kept a tradition of pickling chiles and vegetables to give to close friends and family. All who knew her expected this Christmas gift every year. It was her secret recipe, and now I share with you in the hopes that it inspires you to give the gift of something delicious this holiday season. Let’s cook!

Ingredients

  • 3 cups water
  • 1 1/2 cups distilled white vinegar
  • 1 tablespoon pickling spice
  • 1 1/2 tablespoons sea salt
  • 16 sweet peppers (4 per bottle)
  • 16 Serrano chiles (4 per bottle)
  • 16 white mushrooms (4 per bottle)
  • 16 pearl onions (4 per bottle)
  • 4 medium carrots, peeled and chopped (1 per bottle)
  • Four glass jars with lids
  • 4 self-adhesive labels
  • Ribbons to decorate as Christmas gifts

Directions

    Place a deep saucepan over medium heat and add the water, vinegar, salt and pickling spices, and bring to a boil.

    Meanwhile, place the vegetables and peppers in each jar in the order listed above.

    Pour the mixture of vinegar, salt and spices in each jar, and seal with the lid. Add the label to identify the contents and refrigerate. The longer the peppers and vegetables are left to pickle, the tastier they will be. You just have to keep them in the refrigerator.

    To decorate the jars for Christmas, use ribbons to give them a festive touch.
