Mexican Style Hot Dogs

I love visiting Mexico and I normally make the trip once a year. I get to see my family, enjoy the music at parties and, above all, I get to eat delicious Mexican food. When we eat at home, the menu usually consists of rice, some kind of meat, beans and fruits. But, I have the most fun going out and eating street food like enchiladas, pozole, tacos and sopes. But one very popular item that I always have to eat when I'm there are the hot dogs. Mexican hot dogs can be as simple as a sausage with mustard, ketchup and tomatoes or they can be a little more complicated like this recipe I'm sharing with you today. These delicious hot dogs are covered in bacon and served on hot buns with pico de gallo and peppers in vinegar. So delicious! Now you can prepare them at home!

Ingredients

  • A package of your favorite hot dogs (8)
  • 8 strips of bacon
  • 8 hot dog buns
  • 4 Roma tomatoes
  • 1/3 cup of white onion, finely chopped
  • 3 tablespoons of cilantro, finely chopped
  • 2-3 jalapeño peppers in vinegar, deveined and finely chopped
  • Salt to taste
  • Mustard
  • Ketchup
  • Mayonnaise (optional)

Directions

    Wrap each hotdog in a strip of bacon and place in a baking dish. Bake at 350°F for approximately 20 minutes or until the bacon is cooked and browned.

    In the meantime, wash and dice the tomatoes into small cubes. Add the onion, cilantro and vinegar jalapeños to the tomatoes, mix well and add salt to taste.

    Heat the hot dog buns in the microwave, toaster or steam them.

    Add the hotdog to the bun and top with mustard, ketchup, mayo (if you like) and sauce. Enjoy!

    You can fry the hotdogs in a pan on the stove.

    You can make the pico de gallo without the pepper and just add it for those people who enjoy spicy food.
