Ingredients

  • 1 lb chorizo sausage, casing removed, chopped
  • Vegetable oil, as needed
  • 2 large stalks celery, chopped
  • 1 large onion, finely chopped (1 cup)
  • 4 cloves garlic, finely chopped
  • 1 tablespoon fresh or 1 teaspoon dried oregano leaves
  • 1 tablespoon fresh or 1 teaspoon dried thyme leaves
  • 3 bosc pears, peeled, chopped
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1/4 cup finely chopped cilantro
  • 8 cups 1-inch cubes baguette French bread
  • 1/2 cup chopped pecans

Directions

    Heat oven to 350°F. Grease or spray 13x9-inch (3-quart) glass baking dish. In 12-inch skillet, cook chorizo over medium-high heat, stirring frequently, 6 to 8 minutes or until no longer pink. Measure drippings from pan; if necessary, add vegetable oil to measure total of 3 tablespoons. Add celery, onion, garlic, oregano and thyme; cook 3 to 4 minutes, stirring frequently, until slightly softened. Stir in pears to coat.

    Pour mixture into large bowl. Add broth to skillet; stir to loosen browned bits. Pour into bowl of chorizo mixture. Stir in cilantro, bread and pecans. Spoon into baking dish. Cover with aluminum foil.

    Bake 50 to 55 minutes or until brown. Remove foil; bake about 5 minutes longer or until golden brown.
