I know everyone thinks their mom's food is the best in the world. It’s something I've heard from almost all of my friends on some occasion, and they are always convinced it's true. However, when I say my mother is the best cook and that everything she cooks is wonderful, I have a very good reason to be believed: she is a chef. I grew up in a house where everything revolved around the kitchen, and where every occasion was closely related to food. When I got sick, the way I was pampered was by my mom making my favorite cake. When someone was traveling, the way to welcome their return was by making them their favorite food. My mom made luxurious breakfasts for my brother, a -calorie conscious and natural breakfast for me, which she would bring to our beds every morning. If anyone is the perfect example of eating like a king, that's my mom. When I became a vegetarian no one told me “this is not a restaurant”. On the contrary, at home we already ate like we were at a restaurant, and to start to make something special for “la vegetariana” (the vegetarian) was not out of the ordinary. Our friends would indulge (and still do), each time they visited us and ate my mother's food, and I have the slight suspicion that they visited frequently because of that. Choosing a favorite dish from the thousands I have enjoyed from my mom throughout my life is impossible. Fresh pasta, salads, soups, cookies, cakes, breads... even homemade chocolate! So, to give you an idea about my mom's delicious food, I have simply chosen one of her fabulous recipes randomly. This dessert is not only delicious because of the delicate pears flavor but also the soft, almost creamy texture of the cake. Serve warm or at room temperature with an ice cream ball, and if you wish, with strawberry or raspberry sauce. I'm sure you will love it.

Ingredients

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg, grated
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 4 eggs
  • 3 cups of grated pears with skin on, grate with the thickest side of the grater (3-4 pears)
  • 1 1/2 cups vegetable oil
  • 1 teaspoon vanilla

To serve:

  • Caramel ice cream, if desired

To decorate:

  • Mint leaves, if desired

Directions

    Preheat oven to 350°F.

    In bowl sieve sugar, flour, cinnamon, nutmeg, salt and baking soda.

    Add the eggs, grated pears, oil and vanilla. Beat with the wire whisk until everything is incorporated. You can also place it in the mixer and beat at medium speed for about 4 minutes.

    Pour the mix in a greased baking pan and bake for an hour or until a toothpick comes out clean.

    Divide into servings and place on dessert plates. Add a ball of ice cream on top and decorate with mint leaves.

    Serve immediately.

    You can use apples instead of pears. Add 1/2-cup fresh raspberries or cranberries to the apple recipe.
