Peanut Butter Cookie Ice Cream Sandwiches

Ice cream sandwiches and cake are summer classic, they're very practical because you can prepare them ahead of time and keep the frozen. You could even create a bar with different types of cookies and ice creams so everyone can make their own. These are my daughters' favorites since they love peanut butter and jelly. I use ready to bake peanut butter cookies and strawberry ice cream. Then I dip them in chocolate and sprinkle them with chopped peanuts. Delicious!

Ingredients

  • 1 roll (16.5 oz) refrigerated Pillsbury™ Peanut Butter Cookie Dough
  • 1 pint of ice cream, your favorite flavor
  • 1 cup chocolate chips
  • 1 cup chopped peanuts

Directions

    Bake the cookies according to their instructions and let cool completely on a rack.

    Take the ice cream out of the fridge 10 minutes before making the sandwiches to allow the ice cream to soften a bit.

    Place a large tablespoon of ice cream over one cookie, top with another cookie and apply pressure lightly. Use a knife to remove the excess ice cream. Place on a plate and reserve in the freezer.

    Repeat 5 more times, using all the cookies.

    Freeze the cookies for at least 20 minutes.

    Heat the chocolate in the microwave, 20 seconds, stir and repeat. You can also use the double boil method stirring until completely melted.

    Dip half of each ice cream sandwich in chocolate and sprinkle chopped peanuts.

    Place back in the freezer for 10 minutes before serving.
