Directions

  • 1 To make 1/2 cup of simple syrup, heat sugar and water in a small saucepan, stirring for 7 minutes until sugar has dissolved.
  • 2 Increase heat until mixture comes to a boil and immediately lower heat. Simmer for 2 more minutes. Remove from heat and let cool completely.
  • 3 Place peaches and simple syrup in a blender and blend until smooth. Pour mixture in 8, 1/2-cup ice pop molds. Freeze for 1 1/2 hours.
  • 4 In a medium bowl whisk cream, sugar and vanilla until well combined. Pour cream mixture over peach mixture. Insert frozen pop sticks and freeze for 7 hours.
  • 5 To unmold: dip molds in warm water until pops are released from the molds.
