Peach Empanadas

Empanadas are a delicious dish and a special pastry in our cultura latina. Empanadas bring back beautiful memories of home; when my mother baked these delicious treats, it was truly a special occasion. I love to make empanadas using seasonal fruits, such as peaches, so I’ve used my mother’s original recipe as an inspiration to create a “no-fuss” version for preparing these ricas empanadas with your own family. Let’s get cooking!

Ingredients

For the filling:

  • 6 medium-sized peaches, sliced
  • 2 cups brown sugar
  • 2 cinnamon sticks
  • 3 cloves
  • 1/3 cup water

For the dough:

  • 2 lbs. pastry dough (4 sheets)
  • 2 eggs, beaten
  • 1/2 cup powdered sugar for dusting

Directions

    To prepare the filling, add all the ingredients to a pot and cook until the mixture resembles a compote. The syrup should be thick; cook on low heat until the mixture reduces as desired. When ready let cool.

    Defrost the pastry dough according to the package instructions. Cut into squares, fill with peach compote and paint the corners with a little egg wash; this will act as an adhesive to prevent the empanada from opening while baking.

    Next, close the empanada in the shape of a triangle and set on a baking tray, preferably lined with parchment paper to prevent sticking. Before baking, paint the empanadas with a bit of the egg mixture using a brush.

    Heat the oven to 380°F and bake for 30 minutes or until golden-brown. To serve, dust with powdered sugar.
