Directions

  • 1 To prepare the filling, add all the ingredients to a pot and cook until the mixture resembles a compote. The syrup should be thick; cook on low heat until the mixture reduces as desired. When ready let cool.
  • 2 Defrost the pastry dough according to the package instructions. Cut into squares, fill with peach compote and paint the corners with a little egg wash; this will act as an adhesive to prevent the empanada from opening while baking.
  • 3 Next, close the empanada in the shape of a triangle and set on a baking tray, preferably lined with parchment paper to prevent sticking. Before baking, paint the empanadas with a bit of the egg mixture using a brush.
  • 4 Heat the oven to 380ºF and bake for 30 minutes or until golden-brown. To serve, dust with powdered sugar.
