Directions

  • 1 Heat the olive oil over medium-low heat in a large pot. Add onion, cook and occasionally stir until soft, about 5 minutes.
  • 2 Add broth, tarragon, salt and freshly ground pepper, bring to a boil.
  • 3 Add the peas and simmer over medium heat for 15 minutes.
  • 4 Using a blender, blend in two batches until you get a smooth puree. Serve immediately with croutons.
