Pea soup or green pea soup is a tasty alternative for a lunch or a light dinner. It is also perfect for those times when you've had one too many drinks and wake up with a hangover. I like to prepare it for lunch on cold or rainy days accompanied by a grilled cheese with Swiss or mozzarella.

Ingredients

  • 1 (12 oz) package frozen peas
  • 1 teaspoon olive oil
  • 1 white onion finely chopped small (1/2 cup)
  • 4 cups low sodium chicken broth
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • Freshly ground black pepper

Directions

    Heat the olive oil over medium-low heat in a large pot. Add onion, cook and occasionally stir until soft, about 5 minutes.

    Add broth, tarragon, salt and freshly ground pepper, bring to a boil.

    Add the peas and simmer over medium heat for 15 minutes.

    Using a blender, blend in two batches until you get a smooth puree. Serve immediately with croutons.
