Ingredients

  • 4 pork chops, cut in small pieces
  • 1/2 cup onion, finely chopped
  • 1 cup peas, washed
  • 1 1/2 cups carrots, peeled and cut in rounds
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Cilantro leaves (optional)

Directions

    In a medium-sized pot over medium heat, lightly fry the pieces of pork until golden brown, for approximately 3-5 minutes. Add the onion and let cook until the onion is transparent.

    Add the peas, carrots and vegetable broth; mix well. Taste and season with more salt and pepper, if necessary.

    Reduce the heat to low, cover and let cook, stirring occasionally, for 15-20 minutes, or until the peas have softened. Remove from heat.

    Garnish with chopped cilantro, if you wish, and serve hot.

    If you're using smoked pork chops, add the bones to the soup to give it more sabor. Remove the bones before serving.
