Soups and stews are a crowd favorite during fall or winter; it’s a perfect meal for any moment of the day. The best part of any preparation is when the esencia of the ingredients is preserved and ‘as they say,’ tastes better the next day, soaking up all the rich sabores. This dish is also an excellent choice for freezing and eating later. One of my favorite soups has to be the patacón or fried plantain soup that my mother makes; it’s an exquisito combination of ingredients, such as the patacones and nourishing vegetables that are key to this recipe. Usually, when my mother comes to visit she makes a generous amount to make sure I have enough to last through the week!

Ingredients

  • 4 cups water
  • 1 piece of chicken
  • 1 grated carrot
  • 3 large potatoes, peeled and cut into cubes
  • 1 large green plantain
  • 1 cup frozen peas
  • Cooking oil
  • Salt, to taste
  • 1 avocado (optional)

Directions

  • 1
    Fill a large pot with four cups of water, the chicken and a bit of salt. Bring to a boil before incorporating the potatoes, carrots and peas.

    Separately, form the patacones by slicing the plantain and frying in a skillet with a bit of cooking oil. When both sides are golden, remove and carefully add to the soup. Let cook for five more minutes.

    When ready, serve immediately and accompany with some sliced avocado.
