Pasta with Tuscan Cream

Now the temperature is rising and we're beginning to spend more time outdoors, the time I have to prepare dinner has been cut short. Keeping in mind that my children love Alfredo pasta, I decided to prepare this Tuscan cream pasta, a creamy and delicious sauce with a base of sundried tomatoes and basil. This is one of my favorite recipes, the preparation is quick and easy, it's an excellent vegetarian option and it's also incredibly tasty. I hope you enjoy it as much as I do!

Ingredients

  • 4 tablespoons of butter
  • 4 garlic cloves, thinly chopped
  • 1/2 tablespoon of dried basil
  • 8 oz of cream cheese
  • 1 can (8 oz) of sundried tomatoes, rinsed, strained and chopped
  • 2 cups of milk
  • 6 oz grated parmesan cheese (approximately 2 cups)
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of salt to taste

Directions

    In a medium saucepan or pot, melt the butter at medium heat. Add the garlic and cook for 2 minutes, stir constantly. Be careful not to let the garlic burn.

    Add the dry basil and cream cheese, stir until the mixture is soft. It will look congealed at first, but after 2-3 minutes it will become a soft and creamy sauce.

    Add the sundried tomatoes. Pour the milk in little by little, about 1/4 cup at a time, mixing quickly. Add the parmesan cheese, pepper and salt.

    Cook the sauce at low heat, stir until the cheese has melted and the sauce has the consistency you want; about 5-10 minutes.

    Serve hot over cooked pasta.
