Pasta is one of those dishes that work well for any occasion and everyone loves it. My favorite weekday dishes are the ones I can prepare in 30 minutes or less and are filled with flavor. I’m in love with this pasta with chorizo recipe because it’s such a flavorful dish. It’s a new favorite in my house and I’ve taken to preparing it often because it’s delicious, inexpensive and easy to make.

Ingredients

  • 1 tablespoon olive oil
  • 1 lb chorizo, cut into slices
  • 2 cups chopped onion
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 (10-ounce) can diced tomatoes
  • 1 cup heavy cream
  • 8 ozs penne pasta
  • Salt and pepper to taste
  • 2 cups shredded Monterey Jack cheese
  • 1/4 cup chopped green onions

Directions

    Fry the chorizo in olive oil for a couple of minutes and drain on paper towel.

    Add the onion and cook 3 to 4 minutes. Add the garlic and cook for 30 seconds.

    Add the chicken broth, tomatoes, cream, salt and pepper. Stir well and simmer for 8 minutes.

    Next, cook the pasta al dente. When ready, drain and add to the sauce with grated cheese and chorizo. Stir well and cook for 2 minutes. Serve hot and garnished with chopped scallions on top.

    When cooking the pasta, add a teaspoon of oil to the water to prevent the pasta from sticking.
