Passion Fruit and Mango Mousse

If you like mousse, you’re going to love this one. It’s very easy to make and always delicious. No struggling with gelatin or egg whites, I promise. The final product is creamy and smooth, filled with passion fruit flavor. The mango adds a sweet touch to the passion fruit’s acidity – a dessert that will transport you with its warm summer taste.

Ingredients

  • 1 (8 oz) package cream cheese, at room temperature
  • 1 cup powdered sugar
  • 1 pinch salt
  • 2/3 cup sugar-free passion fruit pulp (available frozen)
  • 2 cups chilled heavy whipping cream
  • 1 large, ripe mango

Directions

    In a large mixing bowl, using a mixer, whisk the cream cheese, powdered sugar and salt, until the cream cheese is very smooth and softened, about 5 minutes. Add the passion fruit pulp and whisk until the purée is completely integrated, another 3 minutes.

    In another bowl, whisk the chilled cream with the mixer until it forms stiff peaks. Set aside.

    Add half of the whisked cream to the passion fruit mixture, and use a spatula to incorporate the two with a rolling motion until completely combined. This is a somewhat slow process, but it pays to be patient. Repeat with the other half of the whisked cream.

    Peel and cut the mango pulp into small cubes.

    Place the mousse in glasses or in a serving bowl, smooth it out evenly and place the cubed mango over it. Serve immediately or cover with plastic wrap and refrigerate until ready to serve.

    If you want your glass or bowl edges to be clean, place the mousse in a pastry bag and use it to fill the glasses.

    When you whisk the cream, cover with a kitchen cloth so it won’t splash.
