Pancakes with Elderberry and Blueberries

There's nothing more delicious for brunch than pancakes covered in elderberry jam and dried fruits. Set the table with honey, syrup, a variety of jams, whipped butter and fresh fruits so that everyone can enjoy their favorite combination. You can also add dulce de leche and hazelnut cream to give the pancakes a sweeter touch. Serve with fresh orange juice and champagne to make mimosas or coffee. Pour glasses of milk for the little ones. I hope you enjoy this delicious family brunch!

Ingredients

For the elderberry jam and blueberries

  • 2 cups elderberry
  • 1/2 cup blueberries
  • 1 1/2 cup sugar
  • 1 tablespoon lemon juice

For the pancakes

  • 1 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup milk
  • 2 eggs
  • 1/3 cup melted butter
  • 1 teaspoon vanilla
  • Vegetable oil, for cooking

To serve, to taste

  • Fresh fruits (blueberries, raspberries, etc.)
  • Mint leaves

Directions

    For the elderberry and blueberry jam: Combine the elderberries, blueberries, sugar and lemon juice in a medium pot. Let sit for 30 minutes and cook over medium heat until it boils. Stir from time to time and turn the heat off after 20 minutes. Let cool.

    You can make this jam a few days in advance and reserve in a well-sealed, refrigerated container.

    For the pancakes: Combine the flour, baking soda, salt and sugar in a container. Make a hole in the middle and add the milk, eggs, melted butter and vanilla. Stir well until everything is well combined, but not completely incorporated. Let the dough be a little lumpy.

    Preheat the oven to its lowest temperature.

    Heat a non-stick pan and cover in vegetable oil. Pour 1/4 of the mixture into the pan and cook over medium heat until the borders are browned and the surface begins to bubble. Flip the pancakes with a spatula and finish cooking. Place the pancakes in the oven to keep them warm until you’re ready to serve.

    To serve: Serve with the elderberry and blueberry jam and fresh fruits.
