Use breadcrumbs if panko is not available.

Southern cooking is one of my favorite indulgences. I love fried chicken and biscuits with honey, but it’s difficult to make at home because it can be time consuming and high in calories. To cut time, calories and oil, I decided to create my own version of fried chicken at home. I paired it with Pillsbury™ Grand!™ Homestyle Refrigerated Biscuits and a light yet sweet and tangy chipotle sauce. By simply oven-baking lean chicken breast cutlets, my indulgence immediately turned into a mid-week menu favorite for me and my family!

Directions

  • 1 Preheat oven to 350°F. Prepare a baking sheet with non-stick cooking spray.
  • 2 Prepare biscuits according to package instructions. Set aside.
  • 3 In a medium bowl, combine panko, black pepper, seasoned salt and cheese. Stir to combine.
  • 4 Dip each cutlet in egg to cover then transfer to panko mixture. Cover evenly then arrange on baking sheet. Repeat until all cutlets have been breaded.
  • 5 Bake for 35 minutes or until internal chicken temperature is 160°F. Set aside but keep warm.
  • 6 In a medium bowl, combine honey, water, ketchup, white vinegar, chile pepper powder, salt and hot sauce. Whisk to combine.
  • 7 Slice biscuit in half. Insert chicken cutlet in between biscuit. Serve with sweet and tangy chipotle sauce.
