Orange Beef Stir-Fry

A stir fry is a great option for weeknight dinners. This recipe can be done in under 30 minutes and it's packed with exciting and bright flavors. I suggest you make a citrus sauce that will go well with the beef and add all natural flavors. Orange is a great option because its juice can be used for the sauce, the orange segments can add texture to the stir fry and its zest goes wonderfully as a final touch of flavor and garnish.

Ingredients

  • 1 cup orange juice
  • 1 tablespoon grated orange zest
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 lb boneless beef sirloin steak, cut into thin strips
  • 1 1/2 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1 cup baby corn, cut in half
  • 1 cup red bell pepper, julienned
  • 1/2 cup green onions
  • 3 cups orange segments, cut in half
  • Extra grated orange zest for garnishing

Directions

    In a small bowl, combine the first four ingredients until smooth; set aside.

    In a large skillet, stir-fry beef in 1 tablespoon of olive oil for 6-8 minutes or until the beef is no longer pink. Remove from skillet and keep warm.

    Stir-fry baby corn, pepper and green onions with garlic and remaining oil for 3 minutes.

    Stir orange juice mixture and add to the pan.

    Bring to a boil; cook and stir for 2 minutes or until thickened.

    Add beef and orange segments and stir them 1 more minute until they heat through.

    Garnish with extra orange zest and serve.
