Directions

  • 1 In a small bowl, combine the first four ingredients until smooth; set aside.
  • 2 In a large skillet, stir-fry beef in 1 tablespoon of olive oil for 6-8 minutes or until the beef is no longer pink. Remove from skillet and keep warm.
  • 3 Stir-fry baby corn, pepper and green onions with garlic and remaining oil for 3 minutes.
  • 4 Stir orange juice mixture and add to the pan.
  • 5 Bring to a boil; cook and stir for 2 minutes or until thickened.
  • 6 Add beef and orange segments and stir them 1 more minute until they heat through.
  • 7 Garnish with extra orange zest and serve.
