Cupcakes are one of the desserts that I love to bake during holidays. Not only do they look pretty, they are also the perfect creation to use my imagination and add all kinds of ingredients. Everyone in my family loves them so I try to make them whenever we get together. Since it’s also cranberry season, I decided to combine two of my favorite fruits to make these delicious orange cranberry cupcakes.

Directions

  • 1 For the cupcakes: Preheat oven to 350 °F. Lightly grease a cupcake mold.
  • 2 Mix all ingredients in a bowl then fill each mold half way up.
  • 3 Bake for 35 minutes or until a toothpick inserted in the middle comes out dry.
  • 4 Let cool.
  • 5 For the frosting: Combine sugar, cranberries and butter and beat with the electric mixer. Add milk and orange juice a little at a time.
  • 6 Once cupcakes have cooled, add frosting and serve.
