Orange and Cardamom Madeleines

Start your aprons and get ready to bake these delicious cookies for your family! Madeleine cookies are small, cake-like treats shaped like shells. These French confections originated in Lorraine; they’re ricas and quick to make, great for any gathering or as a special birthday gift for friends and family. I made this recipe for the first time thanks to my friend, who gave me my first silicon mold as a gift. Since then, whenever I have the chance I bake these as an afternoon snack with coffee or tea.

Ingredients

  • 4 large eggs
  • 1 1/2 cups sugar
  • 1/8 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • 1 teaspoon orange extract
  • 2 tablespoons orange zest
  • 2 cups all-purpose flour, sifted
  • 3 sticks unsalted butter, softened
  • Powdered sugar (optional)

Directions

    Pre-heat the oven to 350°F.

    If using a metal mold, coat with a non-stick spray for baking. No spray is needed for silicon molds.

    In a mixer, beat the eggs and the sugar, then add the cardamom, vanilla, salt, orange extract and zest. Add the flour and blend until you get an even consistency. Afterward, slowly add the butter and beat until the mixture is smooth.

    Use a spoon to fill each indentation in the mold. Bake for 10-15 minutes or until the cookies are puffed and golden. Let cool for five minutes, then remove from the mold.

    Repeat as necessary to use up the remaining batter. Dust with powdered sugar as desired (optional).

    You can substitute orange for lemon in the recipe.

    You can also add 1 tablespoon of poppy seeds if desired.
