Oat and Chocolate Chip Cookies

I’m as much of a chocolate chip cookie lover as my children are. I often have extra frozen dough in the freezer just waiting for them to beg me for cookies and milk. In the past few months, I’ve been testing new recipes for an upcoming project. With a lot of recipe testing comes a tremendous amount of dirty dishes. Sometimes, before I test a new recipe I ask myself: is there a way I can simplify it so I don’t have to wash so many dishes? There are some recipes that our family can’t go without; and these are the first ones I try to re-create and make tasty by using real ingredients. These oat chip cookies are so delicious and easy to make that all you need is a single mixing bowl, a wooden spatula and a cookie sheet.

Ingredients

  • 3 cups quick cooking oats
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rapadura (organic sugar) or brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup chocolate chips or carob chips
  • 3 tablespoons coconut oil, in liquid form
  • 2 tablespoons almond milk, or other milk of your choice

Directions

    Preheat oven to 375° F.
  • 2
    In a large bowl, mix quick oats baking soda and salt.
  • 3
    Add remaining ingredients and mix well.
  • 4
    Using your hands, finish combining ingredients and begin to form patty-shaped cookies.

    Place cookies on parchment paper lined cookie sheet and bake for 8 minutes.

    Allow cookies to cool and enjoy!
