Noodle Sauce Made with Leftovers

It happens to all of us, whether we finish or start the week with leftovers, we often end up with different parts of meals that can't possibly form another meal together. With a little imagination these leftovers can serve as a foundation for delicious noodles, a complete and comforting meal. You can also serve it with rice, cooked green vegetables, quinoa or couscous.

Ingredients

  • 1 onion diced or half moons
  • 2 cups minced meat (you can use leftover roast beef, meatballs, meatloaf, steak, beef soup) without bones.
  • 1 cup salad without greens (beans, corn, tomatoes, chives)
  • 1 can (8 oz.) Muir Glen™ organic tomato sauce
  • Salt, pepper, oregano

Directions

  • 1
    Heat one tablespoon of oil in a medium pan over medium heat, then add the onion and cook for 5 minutes, stir occasionally.

    Add the meat and salad, heat for 2 minutes.
  • 3
    Add the tomato sauce and stir well, taste and adjust the seasoning.

    Serve with noodles.

Expert Tips

  • tip 1
    Don't overcook the food; remember that the meat is already cooked. If you don't have salad, you can add one 15 oz. can of assorted vegetables, strained.
