Ingredients

  • 1 tablespoon vegetable oil
  • 3 cups morel mushrooms, cubed
  • Salt and pepper, to taste
  • 8 flour tortillas
  • 8 oz smoked cheese, thickly grated

For garnish, to taste:

  • Avocado
  • Salsa

Directions

    Heat 1 tablespoon of vegetable oil in a large frying pan. Add the chopped mushrooms and cook for 8-10 minutes, until golden. Add salt and pepper, to taste.

    Heat a comal or grill pan over medium heat. Heat 2 tortillas. Flip and cover with a thin layer of cheese, 1/4 of the mushroom filling, and another top layer of cheese. Cover with another tortilla.

    Let cook for 3-5 minutes. Once the bottom tortilla is golden brown, flip to brown the other side.
  • 4
    Repeat to make the remaining quesadillas.

    Serve hot, cut in fourths, with avocado and salsa.
