Directions

  • 1 Heat 1 tablespoon of vegetable oil in a large frying pan. Add the chopped mushrooms and cook for 8-10 minutes, until golden. Add salt and pepper, to taste.
  • 2 Heat a comal or grill pan over medium heat. Heat 2 tortillas. Flip and cover with a thin layer of cheese, 1/4 of the mushroom filling, and another top layer of cheese. Cover with another tortilla.
  • 3 Let cook for 3-5 minutes. Once the bottom tortilla is golden brown, flip to brown the other side.
  • 4 Repeat to make the remaining quesadillas.
  • 5 Serve hot, cut in fourths, with avocado and salsa.
