Expert Tips

If you want the meat for carnitas: After cooking and pulling the pork, heat 2 tablespoons vegetable oil in 12-inch skillet over high heat. Stir in pork. Cook about 5 minutes or until desired crispiness.

*If using water, you can stir in 1 teaspoon beef bouillon granules or powder.

In blender, place 3 cups chicken broth, 1 jar (8.25 oz ) mole paste, 1/2 teaspoon ground cumin, 1/2 teaspoon marjoram leaves and 3 tablespoons packed brown sugar. Cover and blend on high speed until smooth. In 2-quart saucepan, heat mixture over medium to medium-high heat until smooth; add to shredded pork. Mole tastes better a day after making it--the flavors set in!

Remember, a slow cooker should not be opened during cooking time, or cooking time will be need to be longer than the recipe states.

Directions

  • 1 In small bowl or measuring cup, mix broth, marjoram and thyme. Spray slow cooker with cooking spray.
  • 2 In slow cooker, place all ingredients. Cover and cook on High heat setting 4 1/2 to 5 1/2 hours.
  • 3 Remove pork from slow cooker. Discard liquid. With two forks, shred or pull pork. Add to warm mole sauce in large bowl. Cover.
  • 4 Heat oven to 350°F.
  • 5 Separate dough into 16 biscuits. Place on ungreased cookie sheets. Bake 13 to 17 minutes. Fill with pork, and serve!
