Directions

  • 1 In a small bowl, combine the club soda and lime juice.
  • 2 Add the mint leaves, sugar, rum and lime slices. Muddle the ingredients together until well mixed.
  • 3 Pour the liquid into popsicle molds and add equal parts mint leaves and lime rounds from the mixture. Freeze for 1 1/2 hours and then insert popsicle sticks. Freeze for 10 hours.
  • 4 To remove, dip the mold in warm water and gently pull on the sticks until the popsicle comes free.
