Morena Escardo A large glass of iced tea with lemon and honey is one of the most refreshing drinks during hot summer days. If you add some fresh herbs such as mint, the result is not only a deeper flavor, but also a cooling effect in the mouth, throat and body. This recipe has all these qualities and more, as it has been enhanced with sweet papaya and watermelon pearls, turning it into a summer beverage extravaganza. Make it for your next brunch, BBQ, or dinner party. The glasses will bring so much beauty to the table that flower arrangements will be unnecessary, and everyone will be impressed and refreshed!

Ingredients

  • 2 cups water
  • 2 bags green tea
  • 1/2 cup papaya pearls
  • 1/2 cup watermelon pearls
  • Juice of 1/2 lime
  • 2 tablespoons honey (you can use more, or less, according to your taste)
  • 4 mint sprigs

Directions

  • 1
Bring water to a boil. Put in a jar with the 2 teabags, and infuse for 10 minutes.
  • 2
You can make the watermelon and papaya pearls in the meantime, by cutting circles with a measuring teaspoon (I used 1/2 teaspoon for smaller pearls).
  • 3
Let the tea cool for 15 minutes, and add the honey and lime juice. Mix well.
  • 4
Add the fruit and mint, and put in the fridge until chilled.

Expert Tips

  • tip 1
Try this tea with different fruits, such as blueberries, strawberries, raspberries, peach slices or orange slices.
  • tip 2
You can use regular tea or herbal teas instead of green tea.
  • tip 3
Mix everything up in the blender for a refreshing smoothie.
