Directions

  • 1 Preheat the oven to 400°F.
  • 2 Peel the potatoes and cut into cubes.
  • 3 Cook in enough water to cover them and add salt.
  • 4 Once they’re soft, strain the water and mash the potatoes to make a puree.
  • 5 Add the egg yolks, Parmesan cheese and butter to the puree. Mix well and let cool.
  • 6 Sauté the spinach with a bit of butter and the garlic clove.
  • 7 Once they’re ready, remove from the heat.
  • 8 Form little balls with the potato dough and flatten them in the shape of a mini pizza.
  • 9 Fit the pizzas onto a well-greased baking dish.
  • 10 Cover each pizza with spinach, and then add anchovies and sprinkle with mozzarella cheese.
  • 11 Bake until the cheese has melted and serve immediately.
