Pizza is always a great option when you have a lot of mouths to feed, but if you want to give your pizza a twist, you should try out these potato mini pizzas. By combining just a few ingredients you already have at hand, you can create a treat all of your guests will love and best of all, it only takes a few minutes! Ingredients

  • 6 medium potatoes
  • 3 egg yolks
  • 4 tablespoons of Parmesan cheese
  • 2 tablespoons of butter
  • 6 cups frozen spinach
  • 1 garlic clove, finally chopped
  • 1 can of anchovies
  • 1/2 cup of shredded mozzarella
  • Salt to taste

Directions

    Preheat the oven to 400°F.
  • 2
    Peel the potatoes and cut into cubes.
  • 3
    Cook in enough water to cover them and add salt.
  • 4
    Once they’re soft, strain the water and mash the potatoes to make a puree.
  • 5
    Add the egg yolks, Parmesan cheese and butter to the puree. Mix well and let cool.

    Sauté the spinach with a bit of butter and the garlic clove.
  • 7
    Once they’re ready, remove from the heat.
  • 8
    Form little balls with the potato dough and flatten them in the shape of a mini pizza.

    Fit the pizzas onto a well-greased baking dish.

    Cover each pizza with spinach, and then add anchovies and sprinkle with mozzarella cheese.

    Bake until the cheese has melted and serve immediately.
