Now that the holidays are almost here, these mini pumpkin pies are perfect to take to work, a party or your kid’s school, or simply to enjoy at home. The best thing about them is that they are very easy to make and you don’t need too many ingredients. My family likes them topped with a little whip cream, but you can also make them with a few marshmallows that are then melted under the broiler. They are truly delicious. Try them!

Ingredients

  • 1 cup pumpkin puree
  • 1 can condensed milk
  • 1 egg
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon vanilla extract
  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • Whipped cream, to taste (optional)

Directions

    Preheat oven to 425 °F.
  • 2
    In a medium-sized bowl, combine pumpkin puree, condensed milk, egg, pumpkin spice and vanilla. Mix until everything is well combined without lumps.

    Unroll pie crust. Use a 2-in cookie cutter to cut out 12 discs.

    Place them in a mini muffin baking tray. Press them lightly until they have the shape of a basket. Add the pumpkin mixture, approximately 1 tablespoon to each mini pie crust.

    Bake for 10-15 minutes or until the filling is firm and the crust is lightly golden.

    Top with whipped cream and serve.

    If you can’t get 12 discs on the first try, combine the remaining dough, roll into a ball, roll out again and cut more discs until you have 12.
