I love preparing wholesome and nutritious foods for my kids that also have a lot of flavor. These mini pies definitely do the trick and my kids love it! Recently I prepared 12 to share at a meeting of Hispanic mothers and they were all fascinated. They couldn't believe something so simple could be so delicious and so beautiful. Try them out!

Ingredients

  • 6 graham crackers
  • 2 teaspoons of honey
  • 2 (6-ozs each) Yoplait® Light Fat Free lemon cream pie yogurt
  • Whipped cream, optional

Directions

    Grind the cookies with the help of a food processor until they have a grainy consistency.
  • 2
    Place the cookies and honey in a small bowl and microwave for 10 seconds. Remove and use a spatula to mix all the ingredients well.

    Add a layer of the cookie mixture to a small glass container. Use a spoon to compact the mixture creating a piecrust.
  • 4
    Add the yogurt to the top and maintain refrigerated until ready to serve.
  • 5
    When ready to serve, sprinkle cookie crumbs on top and decorate with whipped cream.
