Mexican Style Pasta Marinara

Father's Day is a very special celebration. Unfortunately, I did not meet my dad but I had many uncles who loved me as if I was their daughter. Throughout my life, I have had the pleasure of meeting men who are model fathers; but my husband, Juan Ernesto, is number one on my list. That is why today I want to spoil him. Juan Ernesto loves pasta; he is from Cuba, but he says he was Italian in another life. A delightful Mexican-style pasta marinara is easy to prepare, very tasty and your kids can help you prepare it! Let's cook!

Ingredients

  • 1 box (230 grams) of brown rice pasta (noodles or spaghetti)
  • 2 cans of organic roasted tomatoes cut in dices (14.5 oz each can)
  • 2 garlic cloves, finely minced
  • 1 jalapeño, finely sliced
  • 2 teaspoons of olive oil
  • 1 cup of creamy goat cheese
  • 1 Hass avocado, sliced
  • Cilantro for garnish
  • 1 cube or bag of chicken bouillon
  • 1 teaspoon of coarse salt
  • 4 cups of water
  • Salt and pepper

Directions

    Turn on the stove and place a large skillet. Add the olive oil and sauté the garlic; then, add the jalapeño, the tomatoes and season with chicken bouillon, salt and pepper. Cook for 15 minutes.

    Pour 4 cups of water in a pasta pot, add coarse salt and wait until it boils. Add the pasta and cook it until al dente.

    Using a strainer, drain the pasta and cool it off with water at room temperature. Place a pasta serving in a bowl and add the hot tomato sauce.

    Cover with goat cheese; add avocado slices and cilantro for garnish.

    Brown rice pasta does not contain gluten and it is easy to digest. If you wish, you can replace the creamy goat cheese with cream cheese or white cheese.
