Expert Tips

Add 1/4 teaspoon cayenne pepper for a touch of heat.

Directions

  • 1 Heat oil in frying pan on medium heat. Add onion and bell pepper, sauté for 3-4 minutes or until soft. Add garlic and sauté for 1 minute. Add rice and combine with other ingredients.
  • 2 Add broth, corn, beans and tomato sauce; mix well. As soon as most liquid has been absorbed, reduce heat and cover with lid. Cook until rice is al dente, about 15-20 minutes.
  • 3 Sprinkle with cilantro and serve with avocado.
